Cookies with orange juice and stevia with low glycemic load

Gear Gourmet fiends,

Today I tried a new way to make delicious cookies rich in fiber for the breakfast. I have remained very satisfied with the result, so I have decided to share it on my blog too. It is easy to prepare, requires a few ingredients, and little time. Furthermore, if you decide to use stevia instead of sugar, you will have delicious cookies with low glycemic load.

Cooking time: 20 min. Difficulty level: medium.

INGREDIENTS:

- 250g whole wheat flour

- 3g stevia (as substitute to sugar, with zero glycemic load)

- One Vanillin

- Half sachet of baking powder with vanillin (8g)

- 20g coconut flour

- One egg

- One orange medium size (juice + orange peel)

- 65ml Olive oil  

STEP-BY-STEP:

  1. Prepare a bowl for the ingredients.
  2. First comes the whole wheat flour, the baking powder, the vanillin, the coconut flour, and stevia.
  3. Afterwards, add one egg, the orange (the juice + the peel), and the olive oil. Mix all together using a spoon or a mixer.
  4. At the same time, please turn on the oven at 170°C and place it on the ventilated function.
  5. While the oven is heating up, prepare the baking tray by placing a baking paper on top. With a spoon or with bare hands take some of the dough and shape your cookies, or you can use a stamp to make them. I would suggest making them thick 3-4 mm.
  6. Put them in the oven for about 20 minutes on the middle level. Control from time to time to make sure it is not burning out. 

You will have some flavored, gourmet cookies to enjoy with your coffee in the morning. Enjoy!
