A cottage cheesecake with bananas and plums at low glycemic load

Gear Gourmet fiends,

Today I tried a new way to make the cottage cheese, adding fresh fruits on top. The result I liked very much, so I’ve decided to share it on my blog too, in case some of you would like to try it by yourself. It is an easy recipe and requires a few ingredients. Moreover, if you’ll decide to use erythritol instead of sugar, you’ll have a homemade cheesecake with low glycemic loads. 

Cooking time: 45 min. Difficulty level: low.

INGREDIENTS:

- 500g cottage cheese

- two bananas (medium size)

- one plum

- 100g erythritol (substitute for sugar with zero glycemic loads)

- three medium eggs 

- one sachet of baking powder with vanillin 

- 100g butter (melted)

- 100g whole wheat flour 

- 120g flour type 2 (or pure white flour)

STEP-BY-STEP:

  1. In a bowl, place eggs and erythritol, and pound it in a homogeneous compound. 
  2. Add cottage cheese, melted butter, and the baking powder, mix all using a spoon or mixer.
  3. Now add the flours, first the whole wheat flour, afterward the white flour, and mix all together. 
  4. At the same time, please turn on the oven at 180°C and place it on the ventilated function.
  5. While the oven is heating up, prepare the baking tray by spying on the boards some oil and blow some flour on top to prevent sticking. Pour the mixture on the baking dish. 
  6. As the last touch, place some slices of fruits on top, slightly into the compound.
  7. Please put it in the oven for about 45 minutes on the middle level. Control from time to time to make sure it is not burning out. 
  8. When ready, take it out and let it rest for some minutes. Then take out from the tray and serve it.

There you’ll have a flavored, puffy, and slightly sweet cottage cheesecake with bitter-sweet fruit taste. Enjoy!
