Cooking time: 20-30 min. Difficulty level: medium.
INGREDIENTS FOR 2 PERSONS:
- 2 spoons of Virgin olive oil
- 1 onion (medium size)
- 1 sweet pepperoni (a big one)
- 1 tomato (a big one)
- 7-8 dried apricots (without seeds)
- 3-4 Greek walnuts
- Paprika, Curcuma, Curry, Marine Salt
STEP-BY-STEP:
- Wash and clean the onion, pepperoni, and tomato cut them in small pieces.
- Take an anti-adherent cooking pan and turn on the fire on medium heat. Get one spoon of olive oil, add sliced onion and pepperoni. Season with some sea salt, sweet paprika, Curcuma, and curry (a bit of every).
- In the meantime put into a pot three glasses of water with some salt (better if Himalaya gross salt) and one glass of white rice (or black, depending on your preference), on medium fire take it to boil.
- Turn vegetables in the pan every one minute so that they will not stick to the bottom. After some 2-3 minutes add tomatoes in small pieces, and after another few minutes add some water (sufficiently half a glass). Furthermore, these vegetables will cook like steamed. Remember to turn them every minute or two, until you see they're ready. In the end, add dried apricots and Greek walnuts smashed into small pieces, mix all for one minute then turn off.
- When the rice has boiled, put it into the pan with vegetables, and mix all for one minute at the small fire. Now it's ready!
The result is a bowl of bitter-sweet perfumed rice, perfect for lunch and dinner. Tastes great when served hot and/or cold.
